So when fighting a tough opponent, especially one you aren't familiar with, always leave some stamina in reserve to get out of harm's way at a moment's notice, or soak an otherwise lethal blow with a shield. Often when you get too greedy and unleash a string of blows, you'll have no stamina left over to block or get out of the way of an enemy's counter-attack - and often this mistake can be fatal.
Particularly with tough bosses - patience is the key to victory.
With that said, you should only be expending all of your stamina if you know you can kill the enemy, or at least stagger them away. In many of the fights you'll encounter in Dark Souls 3 - especially boss fights - having options is one your greatest assets, and knowing when to press the attack, or dodge and block, is key to survival.
